Combining a passion for food and ethical dining, he opened Vegan Gorilla, a restaurant which is organic, vegan, and dairy / gluten-free, as well as Amour Pâtisserie végétale, a vegan and gluten free bakery. Vegan Gorilla obtained the distinguished title of maitre restaurateur, and subsequently received a Michelin Bib Gourmand, a first for a vegan restaurant. His eco-friendly approach has helped usher in this new paradigm in fine dining to Nice.
